  • 2 teaspoons yeast fresh and active
  • 1 large egg or flax egg for vegan option
  • 2 tablespoons butter melted, or margarine for dairy-free
  • 2 cups all-purpose flour or gluten-free flour blend
  • 1/4 cup sugar brown sugar adds depth
  • 1/2 teaspoon salt
For the Filling
  • 1/2 cup pistachio butter unsalted
  • 1/4 cup brown sugar
  • 1 tablespoon ground cinnamon consider Vietnamese cinnamon
For the Icing
  • 4 ounces cream cheese or mascarpone
  • 1 cup powdered sugar or coconut powdered sugar for vegan
  • 1 teaspoon vanilla extract pure recommended
  • 2 tablespoons heavy cream or non-dairy cream

Method
 

Step 1: Make the Dough
  1. Warm the whole milk in a saucepan until lukewarm, sprinkle yeast and let bloom for 5 minutes.
  2. In a mixing bowl, whisk together yeast, beaten egg, and melted butter. Gradually mix in flour, sugar, and salt until a sticky dough forms.
Step 2: First Rise
  1. Transfer dough to an oiled bowl, cover, and let rise in a warm spot for about 1 hour until doubled.
Step 3: Prepare Filling
  1. Combine pistachio butter, brown sugar, and cinnamon in a bowl until smooth. Optionally fold in chopped pistachios.
Step 4: Shape the Rolls
  1. Roll the dough into a rectangle, spread filling, roll tightly, and slice into pieces.
Step 5: Second Rise
  1. Arrange rolls in a greased baking dish, cover, and let rise for 30-45 minutes until puffy.
Step 6: Bake
  1. Preheat oven to 350°F and bake rolls for 23-30 minutes until golden brown.
Step 7: Make Icing
  1. Blend cream cheese, powdered sugar, vanilla, and heavy cream until smooth.
Step 8: Ice & Serve
  1. Let rolls cool slightly, then ice while warm and serve with chopped pistachios if desired.
