Method
 

Preparation
  1. Prepare the Marinade: Whisk together Irish whiskey, salt, and pepper in a bowl. Add steaks, coating well. Marinate for at least 30 minutes.
  2. Cook the Potatoes: Peel and chop potatoes, cover with cold water, and boil for 15-20 minutes until fork-tender. Drain and return to pot.
  3. Sauté Greens: Melt butter in a skillet over medium heat, add cabbage or greens, sauté for 5-7 minutes until softened.
  4. Finish Colcannon: Mash cooked potatoes until smooth, stir in sautéed greens, additional butter, and cream.
  5. Cook the Steaks: Heat a skillet over high heat, sear marinated steaks for 3-5 minutes per side to desired doneness.
  6. Rest the Steaks: Transfer steaks to a cutting board, allow to rest for 5 minutes before slicing.
  7. Serve: Plate steaks with a scoop of Colcannon Mash, sprinkle with herbs if desired.
