Ingredients
  

For the Noodles
  • 14 oz Udon Noodles Use vacuum-packed for convenience.
For the Stir-Fry
  • 1 tbsp Neutral Oil Vegetable or canola oil works great.
  • 1 lb Shrimp Fresh or frozen.
  • 2 cloves Garlic (minced)
  • 1 medium Yellow Onion (sliced) Red onion can be used.
  • 8 oz White Mushrooms (sliced) Substitute with shiitake or button mushrooms.
  • 1 medium Carrot (cut matchstick-style)
  • 2 stalks Spring Onion Both green and white parts.
For the Sauce
  • 3 tbsp Soy Sauce Low-sodium options are available.
  • 2 tbsp Oyster Sauce
  • 1 tbsp Dark Soy Sauce Do not replace with regular soy sauce.
  • 1 tbsp Rice Vinegar Apple cider vinegar can be used.
  • 1 tbsp Brown Sugar White sugar can serve as a substitute.
For the Finishing Touches
  • 1 tsp Freshly Crushed Black Pepper Can be swapped with white pepper.
  • 1 tbsp Toasted Sesame Oil Regular sesame oil can work.

Method
 

Step-by-Step Instructions
  1. Prepare Noodles: Boil a pot of water, add udon noodles, and cook for 3-4 minutes. Drain and rinse under cold water.
  2. Cook Vegetables: Heat 1 tbsp of oil, add minced garlic for 1 minute, then stir-fry sliced mushrooms, onion, and carrots for 2-3 minutes. Season and set aside.
  3. Cook Shrimp: Add 2 tbsp of oil, then shrimp; sauté for 2-3 minutes. Add soy sauce and salt until shrimp turn pink, then set aside.
  4. Stir-Fry Noodles: Add noodles to the pan, stir-fry for 2-3 minutes to absorb flavors.
  5. Combine: Add the cooked vegetables and shrimp back to the pan, drizzle sauces and sprinkle sugar. Toss for 1-2 minutes.
  6. Serve: Transfer to a plate, garnish with spring onion, and serve hot.
