Step-by-Step Instructions
- Prepare Noodles: Boil a pot of water, add udon noodles, and cook for 3-4 minutes. Drain and rinse under cold water.
- Cook Vegetables: Heat 1 tbsp of oil, add minced garlic for 1 minute, then stir-fry sliced mushrooms, onion, and carrots for 2-3 minutes. Season and set aside.
- Cook Shrimp: Add 2 tbsp of oil, then shrimp; sauté for 2-3 minutes. Add soy sauce and salt until shrimp turn pink, then set aside.
- Stir-Fry Noodles: Add noodles to the pan, stir-fry for 2-3 minutes to absorb flavors.
- Combine: Add the cooked vegetables and shrimp back to the pan, drizzle sauces and sprinkle sugar. Toss for 1-2 minutes.
- Serve: Transfer to a plate, garnish with spring onion, and serve hot.
