Method
 

Tart Preparation
  1. Combine flour and powdered sugar, cut in cold butter until crumbs form. Gradually add cold water until dough holds together, then refrigerate.
  2. Preheat oven to 350°F (175°C). Roll out the chilled dough and shape it into a tart pan, pricking the bottom with a fork.
  3. Blind bake the crust for 15 minutes, then remove parchment and weights. Bake until golden brown.
Grapefruit Curd Preparation
  1. Whisk grapefruit juice, zest, granulated sugar, and eggs in a saucepan over medium heat until thickened.
  2. Remove from heat and whisk in unsalted butter until smooth. Pour into tart crust and spread evenly.
Finishing Touches
  1. Cover the tart with plastic wrap and refrigerate for at least 2 hours to set.
  2. Slice and serve chilled, garnished with grapefruit slices or zest.
