  2. Segment the oranges by peeling and slicing between the membranes, collecting the segments in a bowl.
  3. Chop the shallot or red onion and soak it in cold water for a few minutes. Halve the Kalamata olives.
  4. In a large mixing bowl, combine fennel, orange segments, shallot, and olives. Toss gently.
