Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a bowl, combine the grated zucchini and salt. Let it sit for about 10 minutes to draw out moisture. After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove excess moisture.
In a large mixing bowl, combine the drained zucchini, mozzarella cheese, almond flour, egg, garlic powder, onion powder, baking powder, oregano, and black pepper. Mix until well combined.
Divide the mixture into 4 equal portions and shape each portion into a bagel shape on the prepared baking sheet, making a hole in the center.
If desired, sprinkle sesame seeds on top of each bagel.
Bake in the preheated oven for 20-25 minutes, or until the bagels are golden brown and firm to the touch.
Allow the bagels to cool for a few minutes before serving.
