Ingredients
  

  • 2 medium zucchinis grated (about 2 cups)
  • 1 teaspoon salt
  • 1 cup shredded mozzarella cheese
  • 1/2 cup almond flour
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1 tablespoon sesame seeds optional, for topping

Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine the grated zucchini and salt. Let it sit for about 10 minutes to draw out moisture. After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove excess moisture.
  3. In a large mixing bowl, combine the drained zucchini, mozzarella cheese, almond flour, egg, garlic powder, onion powder, baking powder, oregano, and black pepper. Mix until well combined.
  4. Divide the mixture into 4 equal portions and shape each portion into a bagel shape on the prepared baking sheet, making a hole in the center.
  5. If desired, sprinkle sesame seeds on top of each bagel.
  6. Bake in the preheated oven for 20-25 minutes, or until the bagels are golden brown and firm to the touch.
  7. Allow the bagels to cool for a few minutes before serving.
