  • 2 medium zucchinis grated
  • 1 teaspoon salt
  • 1 cup cottage cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1 large egg
  • 1/2 cup breadcrumbs or almond flour for a low-carb option
  • Cooking spray or olive oil for greasing

Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Lightly grease the parchment with cooking spray or olive oil.
  2. In a large bowl, combine the grated zucchini and salt. Let it sit for about 10 minutes to draw out excess moisture. After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove as much liquid as possible.
  3. In the same bowl, add the cottage cheese, cheddar cheese, Parmesan cheese, garlic powder, onion powder, black pepper, paprika, egg, and breadcrumbs. Mix until well combined.
  4. Using a tablespoon, scoop the mixture onto the prepared baking sheet, forming small mounds. Flatten each mound slightly with the back of the spoon.
  5. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and crispy.
  6. Remove from the oven and let cool for a few minutes before serving. Enjoy warm or at room temperature.
