  • 2 medium zucchinis sliced (about 4 cups)
  • 1 medium onion chopped
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup breadcrumbs
  • 2 large eggs
  • 2 tablespoons fresh dill chopped (or 1 tablespoon dried dill)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter.
  2. In a large bowl, combine the sliced zucchinis, chopped onion, shredded cheddar cheese, sour cream, breadcrumbs, eggs, dill, garlic powder, salt, and pepper. Mix well until all ingredients are evenly combined.
  3. Pour the mixture into the prepared baking dish, spreading it out evenly.
  4. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the casserole is set.
  5. Remove from the oven and let it cool for about 5-10 minutes before serving.
