Ingredients
  

  • 2 medium zucchinis spiralized into noodles
  • 1 tablespoon olive oil
  • 1 red bell pepper sliced
  • 1 cup snap peas
  • 1 carrot julienned
  • 3 cloves garlic minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon ginger grated
  • Salt and pepper to taste
  • 2 green onions sliced (for garnish)
  • Sesame seeds for garnish

Method
 

  1. Heat the olive oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
  3. Add the sliced red bell pepper, snap peas, and julienned carrot to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  4. Add the spiralized zucchini noodles to the skillet, along with the soy sauce and sesame oil. Toss everything together and cook for an additional 2-3 minutes until the zucchini noodles are heated through but still slightly firm.
  5. Season with salt and pepper to taste.
  6. Remove from heat and garnish with sliced green onions and sesame seeds before serving.
