Description

Delicious zucchini breadsticks with a toasted Parmesan crust and melty mozzarella, perfect for a healthy snack or appetizer.


Ingredients

  • 4 medium zucchini, grated
  • 2 large eggs
  • 1½ cups shredded mozzarella cheese, divided
  • ½ cup grated Parmesan cheese
  • ½ cup Italian-style breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil
  • ¼ cup chopped fresh parsley
  • For Serving: Marinara sauce, Extra Parmesan cheese, Fresh parsley

Instructions

  1. Preheat the oven to 425°F. Line a large baking sheet with parchment paper and lightly brush it with olive oil.
  2. Remove the zucchini moisture: Place the grated zucchini in a clean kitchen towel or several layers of paper towels. Squeeze firmly until you remove as much liquid as possible.
  3. In a large bowl, combine the drained zucchini, eggs, ½ cup mozzarella, Parmesan, breadcrumbs, garlic powder, Italian seasoning, onion powder, salt, pepper, and parsley. Mix until everything is evenly combined.
  4. Spread the mixture onto the prepared baking sheet, forming a rectangle about ½ inch thick. Press it firmly and evenly.
  5. Brush the surface lightly with olive oil.
  6. Bake for 20–25 minutes, until firm and the edges are deeply golden.
  7. Remove from the oven and sprinkle the remaining 1 cup mozzarella over the top.
  8. Return to the oven and bake for another 5–7 minutes, until the mozzarella is completely melted and bubbly.
  9. For an extra-toasty Parmesan crust, broil for 1–2 minutes, watching closely.
  10. Let cool for 5 minutes, then cut into breadstick-shaped pieces.
  11. Serve warm with marinara sauce and extra Parmesan.

Notes

  • Squeeze the zucchini extremely well to avoid sogginess.
  • Don’t make the base thicker than about ½ inch.
  • Bake until the edges are deeply golden before adding the mozzarella.
  • For even crispier bottoms, bake the zucchini mixture on a preheated baking sheet.
