A healthy and delicious crustless veggie pizza made with zucchini and carrots, perfect for a nutritious meal.
Ingredients
- 3 cups zucchini, grated and squeezed dry
- 1½ cups carrots, grated
- 3 large eggs
- 1 cup mozzarella cheese, shredded
- ½ cup Parmesan cheese, grated
- ½ cup almond flour (or all-purpose flour)
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- ½ tsp salt
- ¼ tsp black pepper
- 1 cup pizza sauce or marinara sauce
- 1½ cups mozzarella cheese, shredded
- ½ cup bell peppers, diced
- ¼ cup red onion, thinly sliced
- ½ cup mushrooms, sliced
- ¼ cup black olives, sliced
- 2 tbsp Parmesan cheese
- Optional: Cherry tomatoes, Spinach, Fresh basil, Jalapeños, Turkey pepperoni
Instructions
- Prepare the Vegetables: Grate the zucchini and place it in a clean kitchen towel. Squeeze out as much liquid as possible. Grate the carrots and pat dry if needed.
- Preheat the Oven: Preheat oven to 400°F (200°C). Line a 12-inch pizza pan or baking sheet with parchment paper.
- Make the Crust: In a large bowl, combine zucchini, carrots, eggs, 1 cup mozzarella, Parmesan, almond flour, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.
- Bake the Base: Spread the mixture into a 12-inch circle on the prepared pan. Press firmly and evenly. Bake for 20–25 minutes, or until golden and set.
- Add Toppings: Remove the crust from the oven. Spread the pizza sauce evenly over the top. Sprinkle with the mozzarella cheese. Add the bell peppers, onion, mushrooms, olives, and any additional toppings. Sprinkle with Parmesan cheese.
- Bake Again: Return to the oven and bake for 10–15 minutes, or until the cheese is melted and bubbly.
- Serve: Let the pizza cool for 5 minutes before slicing. Garnish with fresh basil if desired.
Notes
- Ensure to squeeze out as much liquid from the zucchini as possible for a firmer crust.
- Feel free to customize toppings based on your preference.
- This recipe can be made gluten-free by using almond flour.
