Ingredients
- 2 medium zucchinis, sliced (about 4 cups)
- 1 medium onion, chopped
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 cup breadcrumbs
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil
- ¼ cup grated Parmesan cheese
Instructions
- Preheat the oven to 350°F. Grease a 9×13-inch baking dish with olive oil.
- In a large bowl, combine the sliced zucchinis, chopped onion, corn, cheddar cheese, sour cream, breadcrumbs, eggs, garlic powder, oregano, salt, and black pepper. Mix until well combined.
- Pour the mixture into the prepared baking dish, spreading it evenly. Sprinkle the grated Parmesan cheese on top.
- Bake in the preheated oven for 35-40 minutes, or until the casserole is bubbly and the top is golden brown.
- Let it cool for about 10 minutes before serving.
Notes
- For a creamier texture, replace half of the sour cream with cream cheese.
- To add some spice, consider incorporating diced jalapeños or red pepper flakes into the mixture.
