Description
A delicious and easy-to-make Zucchini Casserole with Stuffing Mix that combines tender zucchini, creamy filling, and a crunchy topping.
Ingredients
- 4 medium zucchini, sliced into 1/4-inch rounds
- 1 box (6 ounces) chicken-flavored stuffing mix
- 1/2 cup unsalted butter, melted
- 1 medium yellow onion, finely chopped
- 1 can (10.5 ounces) condensed cream of chicken soup
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt, or to taste
- 2 tablespoons chopped fresh parsley, optional
Instructions
- Preheat the oven. Heat the oven to 350°F. Lightly grease a 9-by-13-inch baking dish.
- Prepare the zucchini. Slice the zucchini into even rounds. If the zucchini is especially watery, lightly salt the slices and let them sit for 10 minutes. Pat dry with paper towels before using.
- Cook the zucchini and onion. Place the zucchini and chopped onion in a large skillet over medium heat. Cook for 5–7 minutes, stirring occasionally, until the zucchini begins to soften. Drain any excess liquid.
- Prepare the stuffing mix. In a bowl, combine the stuffing mix with the melted butter. Stir until the crumbs are evenly coated. Reserve about one-third of the mixture for the topping.
- Make the creamy filling. In a large bowl, mix the condensed cream of chicken soup, sour cream, shredded cheddar, garlic powder, black pepper, and salt. Fold in the cooked zucchini and onion, then stir in the remaining two-thirds of the stuffing mixture.
- Assemble the casserole. Spread the zucchini mixture evenly in the prepared baking dish. Sprinkle the reserved buttered stuffing crumbs over the top.
- Bake until golden. Bake uncovered for 30–35 minutes, until the filling is bubbling and the topping is golden brown. If the top browns too quickly, loosely cover it with foil.
- Rest and serve. Let the casserole stand for 5–10 minutes before serving so the creamy filling can settle. Garnish with fresh parsley if desired.
Notes
- Remove excess moisture: Zucchini releases water as it cooks, so draining it helps prevent a soggy casserole.
- Keep the topping crunchy: Reserve some stuffing mix for the top rather than mixing all of it into the filling.
- Choose your stuffing flavor: Herb-seasoned stuffing works especially well, but chicken or savory varieties are also delicious.
- Add more vegetables: Sliced mushrooms, yellow squash, or chopped bell peppers can add extra flavor.
- Make it cheesier: Add 1/4 cup grated Parmesan to the stuffing topping for a richer, savory crust.
