Description
Delicious zucchini, feta, and spinach fritters served with a creamy garlic tzatziki sauce.
Ingredients
- 2 medium zucchini, grated — about 400 g
- 3 handfuls baby spinach, chopped — about 90 g
- ½ cup (75 g) feta cheese, crumbled
- ¼ cup (15 g) fresh herbs, finely chopped — dill, mint, and/or oregano
- 3 large eggs
- 2 scallions, finely chopped
- 2 cloves garlic, minced
- ⅓ cup (40 g) all-purpose flour
- ½ teaspoon (2 g) baking powder
- Salt and black pepper, to taste
- About ¼ cup (60 ml) olive oil, for frying
- 1½ cups (360 g) Greek yogurt
- 1 small cucumber — about 150 g, peeled and chopped
- 4 cloves garlic, minced
- 2 teaspoons (10 ml) olive oil
- Juice of ½ lemon — about 15 ml
- 2 tablespoons (6 g) fresh dill, chopped
- Salt, to taste
Instructions
- Prepare the zucchini: Place grated zucchini in a strainer. Sprinkle with about 1 teaspoon salt and let sit for 10–15 minutes. Squeeze out as much liquid as possible using a clean kitchen towel.
- Make the mixture: Combine zucchini, spinach, feta, herbs, eggs, scallions, and garlic in a large bowl.
- Add flour and baking powder. Season with salt and pepper and mix until the mixture holds together.
- Cook: Heat olive oil in a large skillet over medium heat. Scoop about 3 tablespoons (45 ml) of batter per fritter and gently flatten.
- Fry for about 3 minutes per side, until golden brown and crisp. Transfer to a paper-towel-lined plate.
- Make the tzatziki: Blend or mix Greek yogurt, cucumber, garlic, olive oil, lemon juice, dill, and salt. Refrigerate while cooking the fritters.
- Serve: Serve the warm fritters with a generous spoonful of chilled garlic tzatziki.

- Ensure to squeeze out as much liquid from the zucchini as possible for crispier fritters.
- Feel free to customize the herbs based on your preference.
- These fritters can be made ahead of time and reheated in the oven.
