Description
A delicious and healthy alternative to traditional fries, made with zucchini and seasoned with garlic and Parmesan.
Ingredients
- 3 medium zucchini
- ½ cup breadcrumbs
- ½ cup grated Parmesan cheese
- 1 tsp garlic powder
- 2 cloves garlic, finely minced
- ½ tsp Italian seasoning
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- 2 large eggs
- 2 tbsp olive oil
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 425°F. Line a baking sheet with parchment paper and lightly grease it.
- Slice zucchini into fry-shaped sticks. Pat them thoroughly with paper towels to remove excess moisture.
- In a bowl, combine breadcrumbs, Parmesan, garlic powder, minced garlic, Italian seasoning, paprika, salt, and black pepper.
- Beat the eggs in a separate bowl.
- Dip each zucchini stick into the beaten egg, then coat thoroughly with the Parmesan-garlic breadcrumb mixture.
- Place the coated zucchini fries in a single layer on the baking sheet, leaving space between them. Drizzle lightly with olive oil.
- Bake for 20–25 minutes, turning halfway through, until golden brown and crisp.
- Sprinkle with fresh parsley and extra Parmesan.
Notes
- Serve immediately with ranch, marinara, or garlic aioli for dipping.
