Description

A delicious and hearty casserole made with ground beef, zucchini, and cheese, perfect for a family dinner.


Ingredients

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 medium zucchinis, sliced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 cup cooked rice (optional)

Instructions

  1. Preheat the oven to 350°F.
  2. In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat if necessary.
  5. Stir in the sliced zucchinis, diced tomatoes, Italian seasoning, salt, and black pepper. Cook for another 5 minutes until the zucchinis are slightly tender.
  6. If using, stir in the cooked rice until well combined.
  7. Transfer the mixture to a greased 9×13 inch baking dish.
  8. Sprinkle the mozzarella cheese and Parmesan cheese evenly over the top.
  9. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  10. Let it cool for 5 minutes before serving.
