Description
A delicious and hearty casserole made with ground beef, zucchini, and cheese, perfect for a family dinner.
Ingredients
- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 medium zucchinis, sliced
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 1 tablespoon olive oil
- 1 cup cooked rice (optional)
Instructions
- Preheat the oven to 350°F.
- In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the sliced zucchinis, diced tomatoes, Italian seasoning, salt, and black pepper. Cook for another 5 minutes until the zucchinis are slightly tender.
- If using, stir in the cooked rice until well combined.
- Transfer the mixture to a greased 9×13 inch baking dish.
- Sprinkle the mozzarella cheese and Parmesan cheese evenly over the top.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Let it cool for 5 minutes before serving.
Notes
- For a spicier kick, add 1 teaspoon of red pepper flakes to the meat mixture.
- You can substitute ground turkey or chicken for a leaner option.
- For a vegetarian version, replace the meat with cooked lentils or a mix of your favorite beans.
