Description
A delicious layered dish featuring zucchini and tomatoes, topped with cheese and breadcrumbs.
Ingredients
- 2 medium zucchinis, sliced into 1/4-inch rounds
- 2 medium tomatoes, sliced into 1/4-inch rounds
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the sliced zucchinis and tomatoes. Add the minced garlic, olive oil, oregano, salt, and black pepper. Toss until the vegetables are well coated.
- In a greased 9×13-inch baking dish, layer half of the zucchini and tomato mixture evenly across the bottom.
- Sprinkle half of the mozzarella cheese over the first layer of vegetables.
- Add the remaining zucchini and tomato mixture on top, followed by the rest of the mozzarella cheese.
- In a small bowl, mix the breadcrumbs and grated Parmesan cheese together. Sprinkle this mixture evenly over the top of the gratin.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the vegetables are tender.
- Remove from the oven and let it cool for 5 minutes before serving. Garnish with fresh basil leaves if desired.
Notes
- For added flavor, consider layering in some sliced onions or bell peppers with the zucchini and tomatoes.
- To make it a complete meal, add cooked ground turkey or sausage between the layers for extra protein.
