Description

A delicious layered dish featuring zucchini and tomatoes, topped with cheese and breadcrumbs.


Ingredients

  • 2 medium zucchinis, sliced into 1/4-inch rounds
  • 2 medium tomatoes, sliced into 1/4-inch rounds
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the sliced zucchinis and tomatoes. Add the minced garlic, olive oil, oregano, salt, and black pepper. Toss until the vegetables are well coated.
  3. In a greased 9×13-inch baking dish, layer half of the zucchini and tomato mixture evenly across the bottom.
  4. Sprinkle half of the mozzarella cheese over the first layer of vegetables.
  5. Add the remaining zucchini and tomato mixture on top, followed by the rest of the mozzarella cheese.
  6. In a small bowl, mix the breadcrumbs and grated Parmesan cheese together. Sprinkle this mixture evenly over the top of the gratin.
  7. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the vegetables are tender.
  8. Remove from the oven and let it cool for 5 minutes before serving. Garnish with fresh basil leaves if desired.

Notes

  • For added flavor, consider layering in some sliced onions or bell peppers with the zucchini and tomatoes.
  • To make it a complete meal, add cooked ground turkey or sausage between the layers for extra protein.
