Description
Campfire Dream S’mores Cheesecake is a must-try delight that combines the rich flavors of chocolate cheesecake with the classic s’mores experience.
Ingredients
- 2 cups (200 g) graham cracker crumbs
- ¼ cup (50 g) granulated sugar
- ½ cup (115 g) unsalted butter, melted
- ¼ teaspoon (1.25 mL) salt
- 680 g cream cheese, softened
- ¾ cup (150 g) granulated sugar
- ½ cup (45 g) unsweetened cocoa powder
- 3 large eggs
- 1 teaspoon (5 mL) vanilla extract
- ½ cup (120 mL) sour cream
- 115 g semisweet chocolate, melted and slightly cooled
- 2 cups (100 g) mini marshmallows
- ½ cup (85 g) milk or semisweet chocolate chips
- ½ cup (50 g) crushed graham crackers
- 2–3 full graham crackers, broken into pieces
Instructions
- Preheat the oven to 350°F (175°C). Mix the graham cracker crumbs, sugar, salt, and melted butter until evenly combined. Press firmly into the bottom of a 23 cm springform pan.
- Bake for 8–10 minutes. Remove from the oven and let cool slightly.
- Beat the softened cream cheese and sugar until smooth. Add the cocoa powder and mix until combined.
- Beat in the eggs one at a time, mixing on low speed just until incorporated. Add vanilla and sour cream.
- Pour in the melted chocolate and mix until smooth and evenly combined. Avoid overmixing.
- Pour the filling over the crust and smooth the top. Bake for 50–60 minutes, until the edges are set but the center still has a slight jiggle.
- Turn off the oven, crack the door open, and leave the cheesecake inside for 1 hour. Remove and cool completely.
- Refrigerate for at least 6 hours, preferably overnight, until fully set.
- Arrange the mini marshmallows, chocolate chips, and graham cracker pieces over the cheesecake.
- Place under the broiler for 30–90 seconds, watching constantly, until the marshmallows are golden and toasted. Alternatively, use a kitchen torch for more control.
- Sprinkle with additional crushed graham crackers and drizzle with melted chocolate if desired.
- Slice with a warm, sharp knife and serve chilled or slightly softened.
Notes
- The cheesecake can be made a day in advance for better flavor.
- For a more intense chocolate flavor, use dark chocolate instead of semisweet.
- Be careful when toasting the marshmallows to avoid burning.
