Ingredients

  • 2 pounds boneless skinless chicken thighs, cut into bite-sized pieces
  • 1/2 cup almond flour
  • 1/4 cup cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 large eggs beaten
  • 1/4 cup soy sauce or tamari for gluten-free
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon fresh ginger minced
  • 1 tablespoon garlic minced
  • 1/4 cup green onions chopped
  • 1 tablespoon sesame seeds optional
  • 1/4 teaspoon red pepper flakes optional, for heat
  • Cooking oil for frying

Method

  1. Dip each piece of chicken into the egg mixture, then dredge in the almond flour mixture, ensuring it is well coated.
  2. Heat about 1 inch of cooking oil in a large skillet over medium-high heat. Once hot, carefully add the coated chicken pieces in batches, frying until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.
  3. In a separate pan, combine the cooked chicken with the chopped green onions, sesame seeds, and red pepper flakes (if using). Toss to combine and heat through for about 2 minutes.
  4. Serve immediately, garnished with additional green onions and sesame seeds if desired.

Notes

  • For a crunchier texture, double fry the chicken by frying it once, letting it rest for a few minutes, and then frying it again until crispy.
  • Add steamed broccoli or bell peppers to the dish for extra vegetables and color.
