Description

Muddy Buddy Rice Krispies are a delicious twist on the classic Rice Krispies treats, coated in a rich chocolate peanut butter mixture and dusted with powdered sugar.

Ingredients

  • 6 cups Rice Krispies cereal
  • 4 tbsp unsalted butter
  • 1 package (10 oz) mini marshmallows
  • ½ tsp vanilla extract
  • ¼ tsp salt
  • 1 cup semi-sweet chocolate chips
  • ½ cup creamy peanut butter
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1½ cups powdered sugar
  • 2 tbsp cocoa powder (optional)

Instructions

  1. Prepare the Rice Krispies Treats
  2. Lightly grease a 9-by-13-inch baking pan or line it with parchment paper.
  3. Melt 4 tablespoons of butter in a large saucepan over low heat.
  4. Add the mini marshmallows and stir until completely melted.
  5. Remove from heat and stir in vanilla extract and salt.
  6. Add the Rice Krispies cereal and gently fold until evenly coated.
  7. Transfer the mixture to the prepared pan.
  8. Lightly press into an even layer without packing it too tightly.
  9. Allow to cool for about 20 minutes.
  10. Cut into Squares
  11. Once completely cooled, remove the treats from the pan.
  12. Cut into 16 even squares.
  13. Set aside.
  14. Prepare the Chocolate Peanut Butter Coating
  15. Combine chocolate chips, peanut butter, and 2 tablespoons of butter in a microwave-safe bowl.
  16. Microwave in 20-second intervals, stirring between each, until smooth.
  17. Stir in vanilla extract.
  18. Let the mixture cool slightly so it is easier to coat the treats.
  19. Coat the Rice Krispies
  20. Place the Rice Krispies squares in a large bowl.
  21. Pour the chocolate peanut butter mixture over them.
  22. Gently turn each square until coated on all sides.
  23. Work carefully to keep the squares from breaking apart.
  24. Add the Powdered Sugar
  25. Combine powdered sugar and cocoa powder, if using, in a large resealable bag.
  26. Add a few chocolate-coated squares at a time.
  27. Seal the bag and gently shake until completely covered.
  28. Transfer the coated squares to a parchment-lined tray.
  29. Chill and Serve
  30. Refrigerate for 20–30 minutes, or until the chocolate coating has set. Serve chilled or at room temperature.
