  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 1/2 cups heavy whipping cream, cold
  • 1 cup mini marshmallows (for topping)
  • 1/2 cup Rice Krispies cereal (for topping)
  • 2 tablespoons melted butter (for topping)
  • 2 tablespoons melted chocolate (optional)

Instructions

  1. Prepare the crust
  2. Lightly grease a 9-inch springform pan or line the bottom with parchment paper.
  3. Melt the butter in a large saucepan over low heat.
  4. Add the mini marshmallows and stir until completely melted and smooth.
  5. Remove from the heat and stir in the vanilla extract and salt.
  6. Fold in the Rice Krispies cereal until evenly coated.
  7. Press the mixture firmly into the bottom of the prepared pan. Use a lightly buttered spatula to prevent sticking.
  8. Let the crust cool completely while you prepare the filling.
  9. Make the cheesecake filling
  10. In a large bowl, beat the softened cream cheese until smooth and creamy.
  11. Add the powdered sugar, vanilla extract, and lemon juice. Beat until well combined.
  12. In a separate chilled bowl, whip the heavy cream until stiff peaks form.
  13. Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.
  14. Assemble the cheesecake
  15. Spoon the cheesecake filling over the cooled Rice Krispies crust.
  16. Spread the top evenly with a spatula.
  17. Cover and refrigerate for at least 4–6 hours, or preferably overnight, until firm.
  18. Add the topping
  19. Melt the butter in a saucepan over low heat.
  20. Stir in the mini marshmallows until melted.
  21. Quickly fold in the Rice Krispies cereal.
  22. Let the mixture cool slightly, then gently place small clusters over the chilled cheesecake.
  23. Drizzle with melted chocolate if desired.
  24. For easier slicing, refrigerate for another 15–20 minutes after adding the topping.

Notes

  • For best results, refrigerate overnight.
  • Use a sharp knife to slice for clean edges.
