  • 1 block Tofu or Tofu Puffs Optional, firm tofu or fried puffs
For the Noodles
  • 8 ounces Rice Noodles About ¼” wide
For the Heat
  • 1 tablespoon Chili Paste Sambal Oelek works well
For Garnishing
  • 1 bunch Fresh Herbs Cilantro, mint, or basil
  • 2 pieces Lime Wedges For squeezing over the soup

Method
 

Step‑by‑Step Instructions
  1. Blend shallots, garlic, red curry paste, lemongrass, ginger, cashews, turmeric, cumin, and cilantro stems in a food processor.
  2. Heat oil in a large pot and sauté shrimp for about 2 minutes on each side.
  3. In the same pot, introduce the prepared laksa paste and sauté for 2 minutes. Add diced chicken thighs.
  4. Pour in coconut milk and stir until well combined, allowing the mixture to thicken slightly.
  5. Add chicken broth, soy sauce, lime juice, brown sugar, and a bay leaf. Simmer for 10 minutes.
  6. Remove chicken, shred it, and return to the pot, stirring well.
  7. Place cooked rice noodles in each bowl, ladle the broth over, and garnish with fresh herbs and lime wedges.
