Preparation Steps
- In a mixing bowl, combine the ricotta cheese, freshly grated parmesan, eggs, salt, and pepper. Stir until smooth and creamy.
- In a medium saucepan, melt the butter over medium heat. Stir in minced garlic and sauté for about 1 minute. Gradually whisk in the flour and cook for 1 minute before adding milk and heavy cream, whisking continuously until thickened.
- Reduce heat to low and stir in mozzarella cheese, fresh spinach, additional salt and pepper. Cook until the mozzarella is melted and spinach wilts.
- Preheat the oven to 350°F (175°C). Prepare the baking dish.
- Grease the baking dish and pour a layer of sauce on the bottom. Layer noodles, ricotta mixture, chicken, and more sauce, repeating until all ingredients are used.
- Top with remaining mozzarella cheese and arrange halved cherry tomatoes on top.
- Bake in the preheated oven for about 45 minutes, or until golden and bubbly.
- Remove from oven and let it rest for 10-20 minutes before serving.
- Garnish with fresh basil and drizzle with balsamic glaze before serving.
