Preparation Steps
  1. In a mixing bowl, combine the ricotta cheese, freshly grated parmesan, eggs, salt, and pepper. Stir until smooth and creamy.
  2. In a medium saucepan, melt the butter over medium heat. Stir in minced garlic and sauté for about 1 minute. Gradually whisk in the flour and cook for 1 minute before adding milk and heavy cream, whisking continuously until thickened.
  3. Reduce heat to low and stir in mozzarella cheese, fresh spinach, additional salt and pepper. Cook until the mozzarella is melted and spinach wilts.
  4. Preheat the oven to 350°F (175°C). Prepare the baking dish.
  5. Grease the baking dish and pour a layer of sauce on the bottom. Layer noodles, ricotta mixture, chicken, and more sauce, repeating until all ingredients are used.
  6. Top with remaining mozzarella cheese and arrange halved cherry tomatoes on top.
  7. Bake in the preheated oven for about 45 minutes, or until golden and bubbly.
  8. Remove from oven and let it rest for 10-20 minutes before serving.
  9. Garnish with fresh basil and drizzle with balsamic glaze before serving.
